Reasoning behind this wine : This is how we see the style of wine made shortly after the Domaine had been founded around 1840 by the priest Etienne Dubost. We can imagine it was enjoyed after the blessing of the Domaine's newly built private chapel by the Archbishop of Lyon on the day of the 12th of May 1855.
Tasting notes: well developped aromatics dominated by cherry and blackcurrant with hint of leather and damp soil. The tannins are soft with the rustic but elegant style style typical of the Gamay Noir grape. How the wine is made: without adding sugar (no chaptalisation) as at that time and as is still the case with all our wines. Contrary to almost all Gamay wine makers, we see the naturally lower alcohol content of a Gamay wine as an advantage and see no point in artificially increasing it by adding sugar during the fermentation process. This wine is not in the fruity, quaffing style but is designed to improve after a couple of years cellaring. Skin contact time is around 12 days at a high maximum temperature of 33°C so as to extract tannin and colour to enable the wine to age. Bottling is in early summer after the wine has been racked off several times. The air contact due to this process will improve the style after the wine has been bottled. In accordance with our policy of naturally made wine we use no additives which are otherwise commonly used such as Arabic gum, metatartrique acid, ascorbic acid etc. We only use a minimum of sulfites. Appellation: Côte Roannaise AOC. Name : L'Authentique " à la manière du 12 mai 1855". Grape : Gamay Noir . Soil : granite. Yield : 40hl/ha. Vintage: 2008. Alcohol : 11.5 %, un-chaptalised. Bottle: Bordeaux type in cases of 6x75cl. We use Nomacorc Classique.
